Abstract

This study presents the development and industrial implementation of technology for producing supplements rich in biologically active substances from grape and pumpkin seeds. The process involves drying seeds to optimal moisture levels, crushing to fine particle size, and processing via supercritical CO₂ extraction. Eight types of fat-soluble extracts were obtained and encapsulated in gelatin capsules. Quantitative and qualitative analyses determined the content of key bioactive compounds: linoleic and linolenic acids, α-tocopherol, β-carotene, and phenolic substances.
